Einkorn Flour, 1 lb
If there is one flour that can be used to add flavor to anything you bake, this could be it. Sweet, nutty, earthy with notes of honey, hay and corn.
Looking like large-size golden flax seeds, einkorn is the original wheat grass that our ancestors stumbled upon in Fertile Crescent and realized they could harvest it to feed themselves. Genetically speaking, it is the oldest of all varieties of wheat out there (hence the term “ancient grain”), belonging to what the Italians call the Farro family of wheats together with spelt and emmer.
The organic einkorn that is used at the Zingerman's Bakehouse is from a Centennial Farm (must be at least 100 years old to get this title) in Caro, Michigan (in the thumb), which is being run by 4th and 6th generation family members. When Zingerman's mills it on their stone mill, it produces a fluffy, aromatic whole grain flour that is very high in protein and minerals, and typically low in gluten. It is superbly suited to tender pastries or pancakes, and can be a great addition to breads as well.
